Nepali Sukuti

Air-dried spiced buffalo or beef strips, crisped briefly and tossed with onion, chilli and lime — Nepal's popular drinking snack.

Ingredients

  • 500g beef sirloin, sliced thin
  • 1 tbsp salt
  • 1 tbsp turmeric
  • 1 tbsp red chilli powder
  • 1 thumb ginger paste
  • 3 garlic crushed
  • 2 tbsp mustard oil
  • For finish: 1 onion sliced, 2 chillies, juice of 1 lime, coriander, salt

Instructions

  1. Rub beef with salt, turmeric, chilli, ginger-garlic and oil.
  2. Hang strips in a dry, airy spot for 3 days (or use a low oven at 50C for 8 hours).
  3. Briefly fry or grill until just crispy.
  4. Tear into pieces; toss with onion, chilli, lime and coriander.
  5. Eat with drinks.
