Cottage Shepherd’s Pie

Ingredients

  • 500g lamb mince
  • 1 onion, diced
  • 2 carrots, diced
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 400ml stock
  • 1 tsp dried thyme
  • 800g potatoes, peeled
  • 50g butter
  • Splash of milk
  • Salt and pepper

Instructions

  1. Brown the mince in a pan, then add the onion and carrot and cook until soft.
  2. Stir in the tomato paste, Worcestershire sauce, thyme and stock; simmer for 20 minutes until thickened.
  3. Meanwhile, boil the potatoes until tender, then mash with butter and milk and season well.
  4. Spoon the mince into a baking dish and spread the mash on top, roughing it up with a fork.
  5. Bake at 200C for 20-25 minutes until golden on top.

  • Roughing up the mash with a fork gives crispier peaks.
  • A little grated cheese on top is never a bad idea.
