Chinese Dim Sum Siu Mai

Ingredients

  • 30 round wonton wrappers
  • 300g pork mince
  • 150g prawns, chopped
  • 5 dried shiitake mushrooms, soaked and chopped
  • 2 spring onions, finely chopped
  • 1 tbsp ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • 1/4 tsp white pepper
  • 2 tbsp cornflour

Instructions

  1. Mix all filling ingredients well; rest 30 min.
  2. Place a wrapper on your hand; spoon filling in the centre.
  3. Gather the edges up around the filling, leaving the top open like a cup.
  4. Pinch the sides to compact; flatten the bottom.
  5. Steam over high heat for 8-10 minutes.
