Ingredients

  • 4 thin beef escalopes, pounded thin
  • 2 eggs
  • 3 garlic cloves, minced
  • Big handful parsley, chopped
  • 2 cups breadcrumbs
  • Salt and pepper
  • Oil for frying
  • Lemon wedges

Instructions

  1. Beat the eggs with garlic, parsley, salt and pepper.
  2. Dip the escalopes in egg, then coat in breadcrumbs.
  3. Shallow-fry in oil 2-3 minutes a side until deep golden.
  4. Drain on paper.
  5. Serve with lemon.
