Ingredients

  • 4 fresh chorizo sausages
  • 4 crusty bread rolls
  • Chimichurri sauce
  • Sliced tomato (optional)

Instructions

  1. Butterfly the chorizo by slicing lengthways without cutting all the way through.
  2. Grill cut-side down over medium-high heat 5 minutes; turn and cook another 5-7 minutes until charred.
  3. Split the rolls; brush with a little chorizo fat.
  4. Place chorizo in the bread; spoon chimichurri generously.
  5. Eat immediately.
