Ingredients

  • 500g pork belly, in one piece
  • 3 tbsp doubanjiang (Sichuan chilli bean paste)
  • 1 tbsp sweet bean paste (tianmianjiang)
  • 2 leeks, sliced
  • 2 green peppers, sliced
  • 3 garlic cloves
  • 1 thumb ginger
  • 1 tbsp Shaoxing wine
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 3 tbsp oil

Instructions

  1. Boil the pork belly whole for 25 minutes; cool; slice thinly.
  2. Heat oil in a wok very hot; render the pork slices for 3 minutes until edges crisp.
  3. Push pork aside; add doubanjiang and sweet bean paste; cook 1 minute until red oil appears.
  4. Add garlic, ginger, then leeks and peppers; toss 2 minutes.
  5. Add wine, soy and sugar; toss to combine.
  6. Eat with rice.
