Ingredients

  • 3 green plantains, peeled and cut into thick rounds
  • Oil for frying
  • Salt
  • Lime

Instructions

  1. Fry the plantain rounds in medium-hot oil for 4 minutes until just softened but not browned.
  2. Lift out and squash flat with the bottom of a glass.
  3. Return to hotter oil and fry until deep golden and crisp, 3 more minutes.
  4. Drain on paper; salt immediately.
  5. Serve with lime.

  • Green (unripe) plantains only — yellow ones turn soggy.
  • The double-fry is what makes them shatteringly crisp.

Serving suggestions

  • Lovely with guacamole or hogao (Colombian tomato salsa).
