Argentinian Locro

A thick stew of pork, corn, beans and squash — Argentina's most patriotic winter dish.

Ingredients

  • 400g pork shoulder, cubed
  • 200g chorizo, sliced
  • 200g bacon, cubed
  • 1 cup white beans, soaked
  • 1 cup dried corn (or 2 cups fresh)
  • 1kg squash, cubed
  • 2 onions
  • 4 garlic cloves
  • 1 tbsp paprika
  • 1 tbsp cumin
  • Salt and pepper
  • For salsa: 1 tsp paprika, 1 tsp chilli, 4 tbsp oil, 2 spring onions

Instructions

  1. Soak beans and corn overnight.
  2. Brown the meats in a heavy pot.
  3. Add onion, garlic, paprika and cumin.
  4. Pour in the drained beans, corn and 2.5 litres water.
  5. Simmer 2 hours.
  6. Add the squash and cook 45 minutes more — it dissolves and thickens the stew.
  7. For the topping salsa, mix oil with paprika, chilli and spring onion; drizzle over each bowl.
