Lebanese Knafeh

Ingredients

  • 400g kataifi (shredded filo pastry)
  • 150g butter, melted
  • 500g mozzarella or akkawi cheese, grated
  • For syrup: 300g sugar, 250ml water, 1 tbsp lemon juice, 1 tbsp orange blossom water
  • Chopped pistachios

Instructions

  1. Make syrup: simmer ingredients 10 minutes; cool.
  2. Toss kataifi with melted butter; press half into a tray.
  3. Sprinkle cheese over.
  4. Cover with remaining kataifi; press down.
  5. Bake at 200C for 25-30 minutes until deeply golden.
  6. Flip onto a serving plate.
  7. Pour cool syrup over hot knafeh.
  8. Top with pistachios.
