Italian Bruschetta

Toasted Italian bread rubbed with garlic and topped with chopped tomato, basil and olive oil — the essence of summer Italy.

Ingredients

  • 1 ciabatta or sourdough loaf
  • 4 ripe tomatoes, finely diced
  • Big handful basil
  • 3 garlic cloves, halved
  • 4 tbsp best olive oil
  • Flaky salt and pepper

Instructions

  1. Slice the bread thickly; toast or grill until golden.
  2. Rub each warm slice with a halved garlic clove.
  3. Toss diced tomato with torn basil, 2 tbsp olive oil and salt.
  4. Pile generously on the toasts.
  5. Drizzle with remaining olive oil and pepper.
  6. Eat immediately.
