Iraqi Dolma

Stuffed vine leaves, peppers, courgettes and onions filled with spiced rice and lamb, slow-cooked with tomato and pomegranate molasses.

Ingredients

  • 1 jar vine leaves, rinsed
  • 3 peppers, 3 courgettes, 2 onions (hollowed)
  • For filling: 2 cups short-grain rice, 400g lamb mince, 2 tomatoes chopped, 1 onion grated, big handful parsley, big handful dill, 2 tbsp tomato paste, 2 tbsp pomegranate molasses, 1 tsp baharat, 80ml olive oil, salt
  • For broth: 1 can chopped tomatoes, juice of 2 lemons, 2 tbsp pomegranate molasses, 1 tbsp tomato paste, 500ml stock

Instructions

  1. Mix filling ingredients.
  2. Stuff each vegetable and roll vine leaves loosely (rice expands).
  3. Layer tightly in a deep pot, vine leaves on bottom.
  4. Pour broth to barely cover; place a plate on top to keep submerged.
  5. Simmer covered very gently 75-90 min.
  6. Rest 15 min before unmoulding.
