Greek Dolmades

Ingredients

  • 1 jar vine leaves, drained
  • For filling: 1 cup short-grain rice, 2 onions finely chopped, 3 spring onions, big handful dill, big handful parsley, big handful mint, 80g pine nuts, 60ml olive oil, juice of 1 lemon, salt and pepper
  • For cooking: 80ml olive oil, juice of 2 lemons, 1 cup water

Instructions

  1. Soften onions; mix with rice, herbs, pine nuts, oil, lemon, salt and pepper.
  2. Place a teaspoon of filling on a vine leaf; fold sides in and roll tightly.
  3. Repeat.
  4. Layer rolls tightly in a pot.
  5. Add oil, lemon juice and water; place a plate on top to keep submerged.
  6. Simmer gently 50 min.
  7. Cool to room temperature.
