Filipino Adobo

Pork (or chicken) braised in soy sauce, vinegar, garlic, peppercorns and bay leaves — the Philippines' national dish.

Ingredients

  • 800g pork belly (or chicken thighs, bone-in)
  • 8 garlic cloves, crushed
  • 5 tbsp soy sauce
  • 5 tbsp white vinegar
  • 1 tsp whole black peppercorns
  • 3 bay leaves
  • 2 tbsp brown sugar
  • 3 tbsp oil
  • Steamed rice to serve

Instructions

  1. Brown the meat in oil; lift out.
  2. Add garlic to the same pan; cook briefly.
  3. Return meat; add soy, vinegar, peppercorns, bay leaves, sugar and 250ml water.
  4. Bring to a boil (don't stir until it boils — Filipino tradition).
  5. Simmer covered 45 minutes.
  6. Uncover; cook on high until sauce reduces to a glaze.
