Eastern European Stuffed Peppers

Ingredients

  • 5 large peppers, tops cut and seeds removed
  • 500g pork mince
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 3 garlic cloves
  • 1 egg
  • 1 tsp paprika
  • For sauce: 1 can chopped tomatoes, 500ml stock, 1 tbsp paprika, 1 onion, 2 bay leaves, 1 tsp sugar
  • 3 tbsp oil
  • Salt and pepper
  • Soured cream and dill to serve

Instructions

  1. Mix mince with rice, onion, garlic, egg, paprika, salt and pepper.
  2. Stuff the peppers; replace tops.
  3. Make sauce: fry onion, add tomato, stock, paprika, bay and sugar.
  4. Arrange peppers in the sauce, standing.
  5. Simmer covered 1 hour until tender.
  6. Serve with soured cream and dill.
