American Meatloaf

Ingredients

  • 600g beef mince
  • 300g pork mince
  • 1 onion, finely chopped
  • 3 garlic cloves
  • 100g breadcrumbs
  • 100ml milk
  • 2 eggs
  • 3 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tbsp dried thyme
  • Salt and pepper
  • For glaze: 4 tbsp ketchup, 2 tbsp brown sugar, 1 tbsp Worcestershire, 1 tsp mustard

Instructions

  1. Soak breadcrumbs in milk for 5 minutes.
  2. Mix all loaf ingredients well.
  3. Shape into a loaf on a lined tray (no tin needed).
  4. Bake at 180C for 45 minutes.
  5. Mix glaze ingredients; brush over the top.
  6. Bake 15 minutes more until glaze is sticky and shiny.
  7. Rest 10 min before slicing.

  • Free-form on a tray gives more glazed surface than a tin.
  • Don't over-mix — leads to tough loaf.

  • Always with mashed potato.

Keeps 4 days; freezes well; great sandwiches next day.
