Ingredients

  • 4 potatoes, cubed
  • 1 can bamboo shoots, drained
  • 1 can black-eyed peas
  • 2 onions, chopped
  • 1 thumb ginger
  • 3 garlic cloves
  • 2 tomatoes
  • 1 tsp turmeric
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 2 green chillies
  • 3 tbsp mustard oil
  • 1 tsp mustard seeds
  • Salt
  • Coriander

Instructions

  1. Heat mustard oil; temper mustard seeds.
  2. Add onion; cook 8 min.
  3. Add ginger, garlic, chilli and spices.
  4. Add tomato; cook 5 min.
  5. Add bamboo shoots, potatoes and 400ml water.
  6. Simmer 20 min until potatoes are tender.
  7. Add black-eyed peas; warm 5 min.
  8. Top with coriander.
