British Welsh Cakes

Small, sweet Welsh griddle cakes with currants, spice and butter — eaten warm with a dusting of sugar.

Ingredients

  • 400g self-raising flour
  • 200g butter, cubed
  • 120g caster sugar
  • 100g currants
  • 1 tsp mixed spice
  • 1 egg, beaten
  • 3 tbsp milk
  • Caster sugar to dust
  • Butter for the pan

Instructions

  1. Rub butter into flour to coarse crumbs.
  2. Stir in sugar, currants and spice.
  3. Add egg and milk; bring together into a soft dough.
  4. Roll out to 1cm thick.
  5. Cut rounds with a 6cm cutter.
  6. Cook on a buttered, hot griddle 3 min a side until golden.
  7. Dust with caster sugar while warm.
