Thai Beef Salad

Ingredients

  • 500g sirloin or ribeye steak
  • For dressing: 3 tbsp fish sauce, juice of 3 limes, 2 tbsp palm sugar, 3 Thai chillies finely chopped, 3 garlic cloves crushed
  • 3 shallots, sliced
  • 3 spring onions
  • Big handful coriander, mint, Thai basil
  • 2 tomatoes, wedged
  • 1 cucumber, sliced
  • 3 tbsp toasted rice powder (toast 3 tbsp rice in a dry pan, then grind)
  • Lettuce to serve

Instructions

  1. Grill steak rare to medium-rare (3 min a side); rest 5 min; slice thin against the grain.
  2. Whisk dressing.
  3. Toss beef with shallots, herbs, tomato, cucumber and dressing.
  4. Top with toasted rice powder.
  5. Eat on lettuce leaves.
