French Steak Frites

Pan-seared steak with peppercorn-cream sauce and crispy French fries — bistro classic, eaten with red wine.

Ingredients

  • 2 thick steaks (sirloin, rib-eye)
  • For frites: 800g potatoes cut into thick chips, oil for frying, salt
  • For sauce: 60g butter, 2 shallots chopped, 100ml brandy, 200ml double cream, 2 tbsp green peppercorns crushed, 1 tbsp Dijon, salt

Instructions

  1. Cut potatoes; soak 30 min; pat dry.
  2. Twice-fry: cook chips at 140C for 8 min; rest; refry at 180C until crisp.
  3. Salt the chips.
  4. Season steaks; sear in butter 2-3 min a side; rest 5 min.
  5. Sauce: soften shallot in steak pan; add brandy (flambé); add cream, peppercorns and Dijon; reduce.
  6. Pour over steak; serve with frites.
