Mexican Sopa de Tortilla

Mexico's classic tomato-chicken soup topped with crispy tortilla strips, queso fresco, avocado and lime.

Ingredients

  • 2 cooked chicken breasts, shredded
  • 1 onion
  • 4 garlic cloves
  • 5 tomatoes
  • 2 chipotles in adobo
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 litre chicken stock
  • 3 tbsp oil
  • To top: 6 tortillas in strips, fried crispy; 1 avocado; 100g queso fresco; lime; coriander

Instructions

  1. Char onion, garlic, tomato in a dry pan.
  2. Blend with chipotles, cumin, oregano and 200ml stock.
  3. Fry in oil 5 min.
  4. Add remaining stock; simmer 15 min.
  5. Add chicken; warm.
  6. Ladle into bowls; pile toppings high.
