Filipino Sinigang

Ingredients

  • 500g pork ribs or belly, chunked
  • 3 tomatoes, quartered
  • 1 onion, quartered
  • 1 thumb ginger, sliced
  • 3 tbsp tamarind paste (or use a sinigang mix sachet)
  • 2 daikon radishes, cubed
  • 200g green beans
  • 2 tomatoes extra
  • 1 bunch water spinach (kangkong) or regular spinach
  • 3 chillies
  • Fish sauce
  • Salt

Instructions

  1. Simmer the pork with onion, ginger and 2 litres water for 45 minutes.
  2. Add tamarind paste, tomatoes and daikon; cook 15 minutes.
  3. Add green beans and chillies; cook 5 minutes.
  4. Stir in the greens at the end to wilt.
  5. Season with fish sauce.
