Burmese Shan Noodle Soup

A tomato-pork-noodle soup from Myanmar's Shan State with chilli oil, crispy chickpeas, sesame and pickled mustard greens.

Ingredients

  • 300g pork mince
  • 4 tomatoes, chopped
  • 2 onions, sliced
  • 5 garlic cloves
  • 1 thumb ginger
  • 1 tsp turmeric
  • 1 tsp paprika
  • 3 tbsp tomato paste
  • 3 tbsp fish sauce
  • 1 litre stock
  • 300g flat rice noodles, cooked
  • 3 tbsp oil
  • To top: chilli oil, fried garlic, crispy fried chickpeas, sesame, pickled mustard greens, spring onion, lime

Instructions

  1. Brown pork in oil.
  2. Add onion, garlic, ginger; cook 5 min.
  3. Add tomato paste, turmeric and paprika.
  4. Add tomatoes; cook 10 min until very soft.
  5. Add stock; simmer 10 min.
  6. Add fish sauce.
  7. Place noodles in bowls; ladle soup over.
  8. Top with all the garnishes.
