Mexican Guacamole

Ingredients

  • 3 ripe avocados
  • 1/2 red onion, very finely chopped
  • 2 jalapeños, finely chopped (seeds removed for less heat)
  • Big handful coriander, chopped
  • Juice of 2 limes
  • 1 tsp salt
  • 1 ripe tomato, deseeded and diced (optional)

Instructions

  1. Scoop the avocado flesh into a bowl.
  2. Add onion, jalapeño, coriander, lime juice and salt.
  3. Mash with a fork to chunky-creamy — not smooth.
  4. Fold in tomato last if using.
  5. Taste — adjust lime and salt.
  6. Eat immediately.

  • Keep some chunks — too smooth and it loses character.
  • Plenty of lime stops it browning.

  • Eat with tortilla chips, on tacos, or as a side.

Storage & reheating

Best fresh; press cling film directly onto the surface to slow browning.
