Ingredients

  • 800g pork shoulder, cubed
  • 4 tbsp massaman curry paste
  • 2 cans coconut milk
  • 3 potatoes, cubed
  • 1 onion, sliced
  • 60g roasted peanuts
  • 2 tbsp fish sauce
  • 2 tbsp palm sugar
  • 2 tbsp tamarind paste
  • 1 cinnamon stick
  • 3 star anise
  • 5 cardamom
  • 3 bay leaves
  • 3 tbsp oil
  • Coriander to top

Instructions

  1. Cook curry paste in coconut cream 5 min until oil separates.
  2. Add pork; coat.
  3. Add remaining coconut milk, whole spices.
  4. Simmer covered 45 min.
  5. Add potato; cook 25 min more.
  6. Add fish sauce, palm sugar, tamarind, peanuts.
  7. Top with coriander.
