Lebanese Manakish

Ingredients

  • 500g flour
  • 1 tsp yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 280ml warm water
  • 3 tbsp olive oil
  • For za'atar topping: 1/2 cup za'atar mixed with 1/2 cup olive oil
  • For cheese topping: 200g akkawi or mozzarella, grated

Instructions

  1. Mix flour, yeast, sugar, salt; add water and oil; knead 10 minutes.
  2. Rise 1 hour until doubled.
  3. Divide into 6 balls; flatten into 15cm discs on a tray.
  4. Push edges up slightly to form a rim.
  5. Spread za'atar oil thickly on some, cheese on others.
  6. Bake at 220C for 10-12 minutes until edges are golden and crisp.

  • Make the za'atar-oil mix fairly loose — should soak in.
  • Don't over-bake — manakish should stay soft underneath.

Serving suggestions

  • Lovely with cucumber, tomato, olives and yoghurt.
