Ingredients

  • For dough: 400g flour, 1 tsp yeast, 1 tsp salt, 1 tsp sugar, 250ml warm water, 2 tbsp oil
  • For topping: 250g lamb mince, 1 onion, 1 red pepper, 2 tomatoes, 2 garlic, 3 tbsp tomato paste, 1 tsp paprika, 1 tsp cumin, 1/2 tsp cinnamon, big handful parsley, salt — all blended
  • Lemon, parsley, onion slices to serve

Instructions

  1. Mix dough; knead 8 minutes; rise 1 hour.
  2. Blend topping ingredients into a coarse paste.
  3. Divide dough into 4-6 balls; roll each into a paper-thin disc.
  4. Spread topping thinly to the edges.
  5. Bake at 240C (the hottest your oven goes) for 7-10 minutes — should be crisp at edges.
  6. Squeeze lemon over; sprinkle with parsley and raw onion.
  7. Roll up to eat.
