Ingredients

  • 1.2kg chicken pieces
  • For marinade: 4 Scotch bonnets, 1 onion, 6 garlic cloves, 2 thumbs ginger, 6 spring onions, 2 tbsp allspice (pimento), 1 tbsp thyme, 1 tbsp brown sugar, 1 tbsp soy sauce, 3 tbsp lime juice, 1 tsp cinnamon, 1 tsp nutmeg, 1 tsp pepper, 3 tbsp oil, salt — blended
  • Rice and peas, plantains to serve

Instructions

  1. Make marinade by blending all ingredients.
  2. Slash chicken deeply; rub thoroughly with marinade.
  3. Marinate overnight ideally.
  4. Grill over moderate heat 35-45 min, turning, until charred and cooked through.
  5. Or roast at 200C for 40 min.
  6. Rest 10 min.
