Egyptian Hawawshi

Egyptian pita stuffed with spiced minced beef, onion and parsley, baked until the bread is golden and crispy.

Ingredients

  • 4 pita breads (or 8 small)
  • 500g beef mince
  • 1 onion, finely chopped
  • 1 green pepper, finely chopped
  • 3 garlic cloves
  • 2 tomatoes, finely chopped
  • Big handful parsley
  • 1 tbsp baharat (Egyptian 7-spice)
  • 1 tsp paprika
  • 1 tsp cumin
  • 3 tbsp tomato paste
  • 3 tbsp oil
  • Salt and pepper
  • Lemon to serve

Instructions

  1. Mix all filling ingredients (raw — they cook inside the pita).
  2. Split each pita; stuff generously with the filling.
  3. Press to seal.
  4. Brush both sides with oil.
  5. Bake at 220C for 20-25 minutes, turning once, until pita is golden and crispy and meat is cooked.
  6. Cut into wedges.
  7. Squeeze lemon over.
