Filipino Adobo Chicken

Ingredients

  • 8 bone-in chicken thighs
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 6 garlic cloves, smashed
  • 3 bay leaves
  • 1 tsp black peppercorns
  • 1 cup water
  • 1 tbsp brown sugar
  • 2 tbsp oil

Instructions

  1. Combine all the ingredients in a pot.
  2. Bring to a boil — do NOT stir during the first 10 minutes (vinegar must boil off harshly first).
  3. After 10 minutes, you can stir.
  4. Reduce heat and simmer covered 25 minutes.
  5. Lift out the chicken; reduce the sauce over high heat 5-10 minutes until thick.
  6. Return chicken to coat.
  7. Serve over rice.

  • The vinegar smell mellows into a perfect tang.
