Czech Goulash

A thick, paprika-deep beef stew with caraway and onions, eaten with bread dumplings — Czech soul food.

Ingredients

  • 800g beef chuck, cubed
  • 3 onions, chopped
  • 3 tbsp Hungarian sweet paprika
  • 1 tsp caraway seeds
  • 3 garlic cloves
  • 2 tbsp tomato paste
  • 1 tbsp marjoram
  • 1 bay leaf
  • 1 litre beef stock
  • 3 tbsp flour
  • 3 tbsp oil
  • Salt and pepper
  • Bread dumplings (knedliky) to serve

Instructions

  1. Brown the beef in oil; lift out.
  2. Soften onions slowly for 15 min until very deep golden.
  3. Off the heat, add paprika, caraway and garlic.
  4. Stir in tomato paste.
  5. Return beef; sprinkle flour.
  6. Add stock, marjoram and bay; simmer covered 90 min.
  7. Adjust seasoning.
  8. Serve over sliced dumplings.
