Chinese Steamed Sea Bass

Ingredients

  • 1 whole sea bass (700g), scored on each side
  • 1 thumb ginger, julienned
  • 4 spring onions, sliced
  • 3 tbsp soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tbsp sugar
  • 1 tbsp sesame oil
  • 3 tbsp peanut oil
  • Coriander

Instructions

  1. Place fish on a plate; stuff cavity with half the ginger and spring onion.
  2. Steam over boiling water 10-12 min until flesh is just opaque.
  3. Drain off any water from the plate.
  4. Mix soy, wine, sugar and pour over.
  5. Top with remaining ginger, spring onion and coriander.
  6. Heat peanut oil in a small pan until smoking; pour sizzling over the fish.
  7. Eat immediately.
