Burmese Pork Belly Curry

Ingredients

  • 1kg pork belly, cubed
  • 4 onions, sliced
  • 2 thumbs ginger
  • 6 garlic cloves
  • 1 tsp turmeric
  • 1 tbsp paprika
  • 1 tsp chilli powder
  • 3 tbsp fish sauce
  • 3 tbsp soy sauce
  • 1 tbsp brown sugar
  • 3 tbsp oil
  • Big handful coriander

Instructions

  1. Brown pork belly in oil; lift out.
  2. Blend onion, ginger, garlic into a paste; fry in oil 10 min until very dark.
  3. Add turmeric, paprika, chilli.
  4. Return pork; add fish sauce, soy, sugar and 400ml water.
  5. Simmer covered very gently 70-80 min until tender and sauce is thick — oil should float on top.
  6. Top with coriander.
