Ingredients

  • 100g fermented tea leaves (laphet), well-drained
  • 2 tbsp peanut oil
  • 2 tbsp fish sauce or soy sauce
  • Juice of 2 limes
  • 2 cups shredded cabbage
  • 2 tomatoes diced
  • 3 tbsp roasted peanuts
  • 3 tbsp fried split chickpeas
  • 3 tbsp fried split mung beans
  • 2 tbsp toasted sesame
  • 2 garlic cloves sliced and fried
  • 1 chilli sliced
  • Big handful coriander

Instructions

  1. Mix tea leaves with oil, fish sauce and lime juice.
  2. Arrange piles around the tea-leaf mound: cabbage, tomato, peanuts, chickpeas, mung beans, sesame, garlic, chilli, coriander.
  3. At the table, toss everything together vigorously.
  4. Eat right away.
