American Buffalo Wings

Ingredients

  • 1kg chicken wings, separated
  • 1 tbsp baking powder
  • 1 tsp salt
  • For sauce: 80g butter, 80ml hot sauce (Frank's RedHot is traditional), 1 tbsp white vinegar, 1 tsp Worcestershire
  • Blue cheese dip and celery sticks to serve

Instructions

  1. Pat the wings dry; toss with baking powder and salt.
  2. Arrange on a rack on a tray.
  3. Bake at 220C for 40-45 minutes, turning once, until shatteringly crispy.
  4. Melt the butter; whisk in hot sauce, vinegar, Worcestershire.
  5. Toss the hot wings in the sauce.
