Brazilian Bolo de Fubá

Ingredients

  • 200g cornmeal (fubá)
  • 200g flour
  • 250g sugar
  • 250ml milk
  • 120ml oil
  • 3 eggs
  • 100g grated parmesan or coalho cheese
  • 1 tbsp baking powder
  • 1 tsp fennel seeds (optional)
  • Pinch salt

Instructions

  1. Whisk eggs, sugar, milk, oil.
  2. Mix cornmeal, flour, baking powder, salt, cheese, fennel.
  3. Combine.
  4. Pour into a buttered tin.
  5. Bake at 180C for 35-40 min until golden and a skewer comes out clean.
