Pakistani Bhindi Masala

Ingredients

  • 500g okra, sliced into rounds
  • 2 onions, sliced
  • 2 tomatoes, chopped
  • 3 garlic cloves
  • 1 thumb ginger
  • 1 tsp coriander powder
  • 1 tsp red chilli powder
  • 1/2 tsp turmeric
  • 1 tsp garam masala
  • 2 green chillies
  • 4 tbsp oil
  • Salt and lime

Instructions

  1. Stir-fry the okra in 2 tbsp oil over high heat for 8-10 minutes until just tender and no longer slimy; set aside.
  2. In the same pan add more oil; fry onion till golden.
  3. Add ginger-garlic, then spices.
  4. Add tomato; cook until soft.
  5. Return the okra; toss gently.
  6. Finish with garam masala and lime.

  • Cooking the okra alone first stops it being slimy.
  • Don't cover the pan while cooking okra — trapped steam causes sliminess.

Serving suggestions

  • Lovely with roti and dal.
