Ingredients

  • 600g beef chuck, cubed
  • 3 cups basmati rice, washed
  • 3 onions sliced
  • 1 tbsp ginger-garlic paste
  • 3 tbsp mustard oil
  • 5 cardamom
  • 1 cinnamon stick
  • 5 cloves
  • 2 bay leaves
  • 1 tbsp garam masala
  • 1 tsp turmeric
  • 2 tbsp green chilli paste
  • 5 cups stock or water
  • Salt
  • Coriander

Instructions

  1. Heat mustard oil; fry whole spices.
  2. Brown onions until deep gold.
  3. Add ginger-garlic; cook 1 min.
  4. Add beef; brown.
  5. Add chilli paste, turmeric and 500ml water; simmer covered 35 min until tender.
  6. Add rice and remaining stock; salt.
  7. Cover; cook on low 18 min.
  8. Sprinkle garam masala; rest 10 min.
  9. Top with coriander.
