Indian Baingan Bharta

Ingredients

  • 2 large aubergines
  • 3 tbsp oil
  • 1 tsp cumin seeds
  • 2 onions, finely chopped
  • 1 tbsp ginger-garlic paste
  • 3 tomatoes, chopped
  • 2 green chillies, chopped
  • 1 tsp turmeric
  • 1 tsp red chilli powder
  • 1 tsp garam masala
  • 1 cup peas (optional)
  • Big handful coriander
  • Salt

Instructions

  1. Char aubergines directly on a gas flame or grill until skin is blackened and flesh is collapsing.
  2. Rest covered 10 min.
  3. Peel; mash the flesh on a board.
  4. Heat oil; temper cumin.
  5. Add onion; cook 8 min.
  6. Add ginger-garlic, chilli, then dry spices.
  7. Add tomato; cook until mushy.
  8. Add aubergine and peas; cook 10 min.
  9. Finish with garam masala and coriander.
