Colombian Aji Picante

Ingredients

  • 1 bunch spring onions, finely chopped
  • 1 tomato, finely chopped
  • 2 chillies, finely chopped
  • Big handful coriander, chopped
  • Juice of 2 limes
  • 3 tbsp vinegar
  • 3 tbsp water
  • Salt

Instructions

  1. Combine all the chopped ingredients.
  2. Stir in lime, vinegar, water and salt.
  3. Rest 15 minutes for the flavours to meld.
  4. Adjust salt and lime.
