Ingredients
- 2 cans chopped tomatoes
- 1 onion, chopped
- 2 garlic cloves
- 1 carrot, diced
- 2 tbsp tomato paste
- 500ml stock
- 1 tsp sugar
- Handful basil
- 3 tbsp olive oil
- Salt and pepper
Instructions
- Soften the onion, carrot and garlic in the oil.
- Stir in the tomato paste, then the tomatoes, stock and sugar.
- Simmer for 15 minutes.
- Add the basil and blend smooth.
- Season to taste.
