Indian Tamil Sambar Rice

Ingredients

  • 2 cups basmati rice
  • 1/2 cup toor dal
  • 1 cup mixed vegetables
  • 2 tbsp tamarind paste
  • 2 tbsp sambar powder
  • 1 tsp turmeric
  • 3 tomatoes
  • For tarka: 3 tbsp ghee, 1 tsp mustard seeds, 1 tsp cumin seeds, 10 curry leaves, 2 dried red chillies, 1 tsp asafoetida
  • Cashews
  • Salt
  • Coriander

Instructions

  1. Pressure cook rice and dal with 5 cups water for 15 min.
  2. Mash to a coarse purée.
  3. Add vegetables, tamarind, sambar powder, turmeric, tomatoes and salt; cook 15 min.
  4. Heat ghee; temper mustard, cumin, curry leaves, chillies, asafoetida and cashews.
  5. Pour over.
  6. Top with coriander.
