Indian Saag Paneer

Ingredients

  • 500g spinach (frozen or fresh)
  • 100g mustard greens or kale (optional)
  • 250g paneer, cubed
  • 1 onion, chopped
  • 3 garlic cloves
  • 1 thumb ginger
  • 2 tomatoes
  • 1 green chilli
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric
  • 1 tsp garam masala
  • 1 tsp kasuri methi
  • 3 tbsp ghee or oil
  • Salt
  • 2 tbsp cream

Instructions

  1. Wilt the greens; blend to a coarse purée.
  2. Pan-fry the paneer in 1 tbsp oil until just golden; rest in warm water (keeps it soft).
  3. In the same pan, temper cumin in ghee.
  4. Add onion, ginger, garlic, chilli; cook 8 minutes.
  5. Add ground spices and tomato; cook until oil separates.
  6. Stir in the spinach purée; simmer 5 minutes.
  7. Add paneer, garam masala, kasuri methi and cream.

  • Cubes of paneer soaked in warm water stay tender.
  • Kasuri methi (dried fenugreek) is the secret North Indian flavour.

Serving suggestions

  • Lovely with naan or jeera rice.
