Spanish Pollo al Ajillo

Ingredients

  • 1kg chicken pieces
  • 15 garlic cloves, crushed
  • 120ml dry sherry or white wine
  • 1 tsp smoked paprika
  • 1 tsp sweet paprika
  • 3 bay leaves
  • 60ml olive oil
  • Big handful parsley
  • Salt and pepper

Instructions

  1. Pat chicken dry; season.
  2. Brown in olive oil with bay leaves until deep golden all over.
  3. Add garlic; cook 2 min — don't burn.
  4. Add paprikas.
  5. Pour in sherry; reduce by half.
  6. Add 100ml stock; cover; simmer 15 min.
  7. Uncover; cook 5 min to reduce.
  8. Top with parsley.
