Italian Linguine alle Vongole

Ingredients

  • 500g fresh clams, purged in salted water 30 min
  • 200g linguine
  • 4 garlic cloves, sliced
  • 1/2 tsp chilli flakes
  • 120ml dry white wine
  • 3 tbsp olive oil
  • Big handful parsley
  • Salt and pepper

Instructions

  1. Cook linguine; reserve a cup of pasta water.
  2. Heat olive oil in a wide pan; cook garlic and chilli until fragrant.
  3. Add clams and wine; cover; cook 3-5 min until clams open (discard any that don't).
  4. Add drained pasta and a splash of pasta water; toss together.
  5. Finish with plenty of parsley.
