Thai Larb Gai

Ingredients

  • 400g chicken mince
  • 3 tbsp uncooked rice (toasted in a dry pan then ground)
  • Juice of 3 limes
  • 3 tbsp fish sauce
  • 1 tbsp palm sugar
  • 1 tsp chilli flakes (to taste)
  • 3 shallots, sliced
  • 3 spring onions
  • Big handful mint
  • Big handful coriander
  • Lettuce leaves, sticky rice to serve

Instructions

  1. Toast rice in a dry pan until golden; cool; grind to a coarse powder.
  2. Cook chicken mince in a dry pan with a splash of water, breaking up, until just cooked.
  3. Off the heat, toss with rice powder, lime juice, fish sauce, palm sugar, chilli, shallot, spring onion and herbs.
  4. Eat in lettuce cups with sticky rice.
