Swedish Cinnamon Buns (Kanelbullar)

Soft cardamom-scented dough rolled around cinnamon butter and topped with pearl sugar — Sweden's most-loved bake.

Ingredients

  • For dough: 500g flour, 7g instant yeast, 80g sugar, 1 tsp ground cardamom, 1/2 tsp salt, 250ml warm milk, 100g butter softened, 1 egg
  • For filling: 100g butter softened, 100g brown sugar, 2 tbsp cinnamon
  • Glaze: 1 egg beaten
  • Pearl sugar to top

Instructions

  1. Mix dough ingredients; knead 10 minutes until smooth; rise 1 hour.
  2. Roll out to a large rectangle.
  3. Spread with the cinnamon butter (creamed filling).
  4. Roll up tightly and slice into 16 rounds (or cut into strips and twist).
  5. Place on lined trays.
  6. Rise 30 minutes.
  7. Brush with egg; sprinkle with pearl sugar.
  8. Bake at 200C for 12-15 minutes until deep golden.
