Indian Jeera Rice

Ingredients

  • 2 cups basmati rice, soaked 30 min
  • 1 tbsp cumin seeds
  • 2 bay leaves
  • 3 cardamom pods
  • 1 cinnamon stick
  • 3 cloves
  • 3 tbsp ghee
  • 4 cups water
  • Salt

Instructions

  1. Heat ghee; temper cumin seeds until aromatic.
  2. Add bay, cardamom, cinnamon and cloves; bloom 30 sec.
  3. Add the drained rice; toast 1 min.
  4. Add water and salt; bring to a boil.
  5. Cover; cook on low 15 min.
  6. Rest 10 min; fluff.
