Irish Brown Soda Bread

A no-knead, no-rise wholemeal bread leavened with bicarbonate of soda — ready in under an hour, with a beautifully nutty crust.

Ingredients

  • 350g wholemeal flour
  • 150g plain flour
  • 1 tsp salt
  • 1 tsp bicarbonate of soda
  • 400ml buttermilk
  • 1 tbsp honey (optional)
  • Oats for topping

Instructions

  1. Mix the dry ingredients in a bowl.
  2. Stir in the buttermilk (and honey if using) until just combined — don't overmix.
  3. Tip onto a floured surface and shape into a round.
  4. Place on a tray; cut a deep cross into the top.
  5. Sprinkle with oats.
  6. Bake at 200C for 35-40 minutes until it sounds hollow when tapped.
  7. Cool on a rack.

  • The cross lets the bread cook through and is traditional.
  • Don't overmix or the bread becomes tough.

  • Lovely with butter and Irish smoked salmon.
