Irish Boxty

Traditional Irish potato pancakes made with both grated raw and mashed cooked potato — crispy outside, soft inside.

Ingredients

  • 400g raw potatoes, peeled and finely grated
  • 400g cooked mashed potato
  • 150g plain flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 egg
  • 150ml milk
  • Butter for frying

Instructions

  1. Squeeze the grated potato firmly in a tea towel to remove water.
  2. Mix grated and mashed potato together.
  3. Stir in flour, baking powder, salt, egg and milk to a thick batter.
  4. Heat butter in a pan over medium heat.
  5. Drop spoonfuls in and flatten slightly; cook 3-4 minutes a side until golden and cooked through.

Tara’s tips

  • Squeezing the raw potato dry is essential — wet boxty is gluey.
  • Cook lower and slower than ordinary pancakes.

Serving suggestions

  • Lovely with bacon and eggs.
