Finnish Salmon Soup

Ingredients

  • 500g salmon fillet, cubed
  • 3 potatoes, cubed
  • 1 leek, sliced
  • 1 carrot, diced
  • 1 onion, chopped
  • 1 litre fish or vegetable stock
  • 200ml double cream
  • 30g butter
  • Big handful dill
  • Salt and pepper

Instructions

  1. Melt butter; soften onion and leek 8 min.
  2. Add carrot and potato; cook 3 min.
  3. Add stock; simmer 15 min until potato is tender.
  4. Add salmon; cook 3-4 min — don't over-cook.
  5. Stir in cream and dill.
  6. Adjust seasoning.

  • Cook the salmon briefly — it should just flake.
  • Plenty of dill is the Finnish signature.

Serving suggestions

  • Lovely with rye bread.

Best fresh; salmon over-cooks reheated.
